3 months in 225 liter oak barrels.
2016 was a dry year in our area but with normal temperatures until the 1st week of September, when the temperature rised abnormally making us harvest before the scheduled date in order to obtain a most with the optimal levels of sugar, acidity and pH to ensure the quality for a short aging period and tipicality of this fresh and funny wine. The harvest took place on September 17th. The fermentation and maceration process lasted 9 days at a maximum temperature of 25°C, the main aim being the extraction of good colour, preservation of fruit aromas and a judicious extraction of tannins to allow us to fix colour and produce a lively, fresh wine to be aged over a short time. The malo-lactic fermentation was carried out in stainless steel vat. The ageing process was done in French and American oak barrels and lasted 3 months.
Deep cherry colour with bluish rim. Intense fruit aromas of black fruits (wild blackberries) and redcurrants along with floral notes (violets). Fresh on the palate with its black fruit characters showing through again. Is a gentle wine that invites you to another sip.The perfect accompaniment for salads, rice or pasta as well as fish or seafood dishes.
