2016 was a dry year in our area but with normal temperatures until the 1st week of September, when the temperature rised abnormally making us harvest before the scheduled date in order to obtain a most with the optimal levels of sugar, acidity and pH to ensure the quality for a short aging period like this wine.
The harvest took place on September 7th. The fermentation and maceration process lasted 10 days at a maximum temperature of 25°C, the main aim being the extraction of good colour, preservation of fruit aromas and a judicious extraction of tannins to allow us to fix colour and produce a lively, fresh wine to be aged over a short time. The malo-lactic fermentation was carried out in stainless steel vat. The ageing process was done in French and American oak barrels and lasted 3 months.
A deep, black cherry colour with intense aromas of fresh red berry fruit (strawberries, raspberries) mingling with subtle creamy notes. Sweet on the palate, round, with a balanced acidity, with its fruit characters showing through again.
Ideal to be served with appetizers, tapas and a variety of Spanish pinchos. It is also a good accompaniment for white meat dishes.
