100% Sauvignon Blanc.
2016 was a dry year in our area but with normal temperatures. The harvest started on September the 8th. Those are the usual data for this variety in our region. The grapes ripened under the regular parameters reaching optimal levels of sugar, acidity and PH to ensure the quality and tipicality of this wine.
Following a gentle pressing of the grapes, the juice fermented for 15 days at a temperature of 14°C. No type of pre-fermentation skin-contact maceration was carried out. The fermentation was interrupted before completion so as to leave a small amount of residual sugar
A bright pale yellow hue with a steely rim. Intensely aromatic with citrus and tropical aromas, such as maracuya and grapefruit, coming through together with herbal notes of fennel. On the palate, the aromas found on the nose come through again. This is a very pleasant wine with high acidity, which brings freshness and vivacity, balanced at the same time by a slightly sweet finish. Overall, this is a pleasant, fun and easy-drinking wine, that invites you to have another sip.
